Hidden hunger, or micronutrient deficiency, is a major public health problem in developing countries caused by a lack of essential vitamins and minerals (e.g. vitamin A, zinc, iron, iodine) in the diet. Often, the signs of this form of malnutrition are ‘hidden’, as individuals may ‘look alright’ but suffer extremely negative impacts on health and well‐being. For example, children may be stunted, have poor night vision or suffer frequently from illness. Adults, too, may succumb more frequently to illness and fatigue easily.
According to the recent medical research, found 70% chronic disease, such as diabetics, cardiovascular disease, obesity, cancer, has some related to the unbalance intaking of nutrition and essential vitamins, minerals. Such hidden hunger is alreay being the killer of our health.
From the national research (NHANES) in USA, and based on data of BMI and the essential vitamins and minerals from their daily taken, almost 40% American Adults have not taken enough Vitamin A, C, D, E, Ca, and Mg. For those fat people (BMI>= 30), the intaking of Vitamin A, C, D, E, Fiber, Ca, Mg and K, are obviously less than normal people (BMI<25) intaking.
